Slow Cooked Chilli Beef and Persian Fetta Soft Shell Tacos

Ingredients

  • 1.2kg beef chuck steak, cut in half
  • salt & pepper to taste
  • 2 tbsp olive oil
  • 2 brown onions, diced
  • 2 garlic cloves, finely chopped
  • 2 tsp ground cumin
  • 1 1/4 tsp smoked paprika
  • 1 tsp ground all spice
  • 1 tsp dried chilli flakes
  • 3 bay leaves, fresh or dried
  • 500ml (2 cups) tomato passata sauce
  • 375ml (1 1/2 cups) water
  • 8 tortillas we used enchilada tortillas
  • 180g Yarra Valley Cheese Persian Fetta

 

Green Tomato Salsa

  • 2–3 large green tomatoes, diced
    feel free to use any tomatoes you like
  • 1/2 rd onion, finely diced
  • 3 tbsp olive oil
  • juice of 1 lime
  • salt & pepper to taste
  • mint & coriander, to garnish
  • fresh red chilli, sliced optional

  • Preheat oven to 150°C.
  • Season beef with salt & pepper. Heat 1tsp of the oil in a frying pan and brown the meat for 2-3 minutes on each side. You will need to do this in batches, reheating your pan each time. Set aside the browned meat.
  • In the casserole dish, sauté the onion on a med-low heat until the onion is lightly golden. Add the garlic, cook stirring for 1 minute & then add the spices. Cook stirring for a further 30 seconds or until aromatic. Remove from the heat.
  • Add the beef, passata, water, dried chilli flakes & bay leaves to the casserole dish. Place in oven with lid on, cook for three hours until meat is tender or falls apart & the sauce has reduced.
  • Place the meat on a chopping board & using a fork, shred the beef into chunks. Mix through the reduced sauce.
  • Make the salsa by combining the tomatoes, red onion, lime juice & 3 tbsp olive oil in a bowl. Set aside.
  • Lightly toast/warm the tortillas in a non stick frying pan on your stove top.
  • To assemble the tacos, place some of the shredded beef in the bottom of each taco. Follow with green tomato salsa, herbs and chilli. Lastly, crumble the Yarra Valley Cheese Persian Fetta over the top. Garnish with mint & coriander.
